It’s safe to say that poke is officially having a moment – not just in Seattle, but all over. The Hawaiian dish consisting of raw, cubed fish tossed in dressing is being served up all over the city; a new poke bar is opening just about every week. Big Island Poke owner, Jaydean Gabriel, saw the power of poke on trips to California and was floored by its popularity.
Gabriel was born on the Big Island of Hawaii. Although his family relocated to the Seattle area when he was a kid, he’s been eating poke all his life. For him, it has always been a fast-casual snack that you can get almost anywhere. He and his business partner Cristian Umali started the People of the Chubbs food truck nearly three years ago, winning fans (and food truck competitions) with their poke tacos and giving Gabriel the confidence to go full-on poke with Big Island Poke, open in Renton since March of 2016.
